Zucchini Fritters with Mixed Herb Salsa

Weekend mornings for me always equate to a bit more time spent in the kitchen cooking a leisurely breakfast. Pancakes or fritters of some sort are generally my pick and I enjoy experimenting with different vegetables and flavours. These super tasty zucchini fritters are on high rotation here and perfectly paired with the mixed herb salsa. Enjoy!

Zucchini Fritters with Mixed Herb Salsa
Serves 1-2, makes 6 fritters

  • 1 large zucchini (130ish grams)
  • 2 small eggs, or 1 large egg
  • 1/2 Tbsp of coconut flour (10g)
  • 1tsp cumin
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • Coconut oil for frying (I used about 1 – 1.5 Tbsps)

  1. Grate the zucchini or blend for 2 seconds on speed 7 in the Thermomix until grated
  2. Place grated zucchini in a bowl, add all other ingredients except coconut oil and mix well to combine
  3. Heat coconut oil in a frying pan over medium heat, once hot enough add 3 x one large tablespoon of mixture to the pan to form three fritters. Fry for about 3 minutes each side or until the fritters start to brown
  4. Repeat the above step for the last three fritters then serve topped with mixed herb salsa
